Prep Time: 15 minutes
Chill Time: 30 minutes or more
Servings: 4

Ingredients

  • 1 cup whole milk ricotta cheese (drain if watery)
  • 1/2 cup heavy cream
  • 2–3 tbsp honey (or powdered sugar, to taste)
  • Zest of 1 orange (or a mix of orange, lemon, and lime for extra brightness)
  • 1–2 tbsp fresh citrus juice (orange, lemon, lime, or a combination)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Optional Toppings:

  • Fresh berries (strawberries, blueberries, raspberries)
  • Crushed shortbread, amaretti, or biscotti
  • Toasted pistachios or sliced almonds
  • Extra citrus zest or a drizzle of honey
  • Fresh mint sprigs

Instructions

Step 1: Whip the Cream

  1. In a cold mixing bowl, beat the heavy cream until soft peaks form. Set aside.

Step 2: Make the Ricotta Base

  1. In another bowl, whisk together:
    • Ricotta
    • Honey
    • Citrus zest
    • Citrus juice
    • Vanilla extract
    • Pinch of salt
  2. Blend until smooth. For an ultra-smooth texture, pulse in a food processor or use an immersion blender.

Step 3: Combine

  1. Gently fold the whipped cream into the ricotta mixture. Keep it light and fluffy—don’t overmix.

Step 4: Chill

  1. Spoon the mixture into dessert cups or bowls.
  2. Refrigerate for at least 30 minutes, or up to a few hours.

Step 5: Serve

  1. Just before serving, top with your choice of berries, crushed cookies, nuts, extra citrus zest, or a drizzle of honey.
  2. Optional: garnish with fresh mint.

Serving Ideas

  • Layer in glasses like a parfait with crushed cookies and berries.
  • Spoon over grilled peaches or roasted figs.
  • Serve alongside thin lemon shortbread for a sophisticated touch.
