Ingredients
-
2 Weetabix
-
200 ml skimmed milk
-
100 g sultanas
-
100 g self-raising flour
-
1 tsp mixed spice
-
2 level tbsp sweetener granules
-
2 large eggs, beaten
Instructions
1. Preheat and Prepare
-
Preheat your oven to 180°C (fan 160°C) or gas mark 4.
-
Line a 450g loaf tin with non-stick baking paper or a reusable silicone liner to prevent sticking.
2. Soften the Weetabix
-
Place the Weetabix into a large mixing bowl and pour in the skimmed milk.
-
Let it sit for 2–3 minutes to absorb the liquid, then mash the softened Weetabix with a fork until fully broken down.
3. Mix the Batter
-
Add the sultanas, self-raising flour, mixed spice, and sweetener to the bowl.
-
Pour in the beaten eggs and stir everything together until fully combined. The mixture will be thick but moist.
4. Bake
-
Spoon the batter into the prepared loaf tin and level the top.
-
Place in the preheated oven and bake for 1 hour, or until a skewer inserted into the centre comes out clean.
5. Cool and Serve
-
Allow the cake to cool in the tin for about 10 minutes, then transfer to a wire rack to cool completely.
-
Once fully cooled, slice into 12 equal portions.
Serving Suggestions
-
Enjoy a slice warm with a dollop of fat-free Greek yoghurt or a drizzle of sweetener-based syrup.
-
Pair with a cup of tea or coffee as a mid-morning snack.
-
Serve with a handful of fresh berries for a more filling dessert.
Storage Tips
-
Store in an airtight container at room temperature for up to 3 days.
-
For longer storage, wrap individual slices in cling film or foil and freeze for up to 1 month. Defrost at room temperature or microwave gently before serving.
